What is Aweshak?

Ashak is made by preparing delicate dumplings filled with a flavorful mixture of spiced Afghani chives. To make Ashak, dough consisting of flour, water, and salt, is prepared and is kneaded until smooth and elastic. The dough is then rolled out into thin circles, and a spoonful of the filling, consisting of Afghani chives, and spices such black pepper is placed in the center of each circle. The dough is folded and the edges are carefully sealed by pressing them together. The filled dumplings are then boiled until they become tender.

Ashak is typically served as a main course in Afghan cuisine, known for its delicious flavors and vibrant presentation. Once the Ashak dumplings are cooked to perfection, they are arranged in a single layer on a serving platter. To enhance the flavors, a generous amount of tangy yogurt sauce is drizzled over the dumplings. The yogurt sauce is often seasoned with garlic, and mint, adding a refreshing and creamy element to the dish. Additionally, the dumplings are topped with tomato-based ground beef stew and a sprinkle of dried mint added as a garnish.
