What is Shola?

Shola Goshti, a flavorful Afghan dish, is made by cooking tender lamb aromatic spices, split pea and rice. To prepare Shola Goshti, the meat is first marinated then cooked in a pot, allowing it to develop rich flavors. Onions, tomatoes, fresh garlic and additional spices are added, creating a fragrant base. Split peas, and thick rice are then incorporated along with the meat broth, and the mixture is brought to a simmer. The dish is slow-cooked until the meat becomes tender and the split peas are soft and creamy. As the flavors meld together, the Shola Goshti develops a hearty and comforting taste.

Once the Shola Goshti is cooked to perfection, it is presented in a large serving dish. The tender meat and split pea stew is generously ladled into individual bowls. The tinder meat is added to tomato-based sauce and topped over the stew, providing extra richness and depth of flavor. The dish is often garnished with a sprinkle of freshly chopped cilantro or parsley, adding a touch of freshness and visual appeal.
