What is Borani Banjan?

Borani Banjan is a flavorful Afghan dish made with eggplant and a tangy tomato-based sauce. To prepare Borani Banjan, eggplants are first sliced into rounds and salted to remove excess moisture. After a short period, the eggplant slices are rinsed and patted dry. They are then shallow-fried until golden brown and tender. And then simmered in a tomato and garlic-based sauce and freshly chopped chili peppers.

Borani Banjan is typically served as a flavorful side dish usually with white rice or Kabuli Palow in Afghan cuisine, known for its rich flavors and vibrant colors. Once prepared, the dish is presented in platter. The tender and golden-brown fried eggplant slices are carefully arranged in a single layer. Over the eggplant, the simmered tomatoes and peppers are spooned, enveloping the slices with its flavorful goodness. The sauce adds a vibrant red hue and a burst of tangy and savory flavors. To provide a creamy and cooling contrast, a dollop of garlic yogurt is often added on top of the sauce.
