What is Subzi?

Sabzi, a popular Afghan dish, is a flavorful combination of sautéed greens and herbs. To prepare sabzi, a mixture of fresh greens and herbs, such as spinach, Afghani chives, and fresh coriander is thoroughly washed and finely chopped. In a pan, onions are sautéed in oil until golden brown and aromatic. The chopped greens and herbs are then added to the pan, along with a selection of spices. The mixture is cooked over medium heat, allowing the greens to wilt and release their flavors. The dish is simmered until the greens are tender and well-cooked.

Sabzi is typically served as a versatile and nutritious side dish in Afghan cuisine, adding depth and flavor to a meal. Once prepared, the vibrant and aromatic Sabzi is presented in a bowl or dish, ready to complement the main course. Its colorful medley of cooked greens, such as spinach, Afghan chives, cilantros, is carefully arranged, showcasing the natural vibrancy of the vegetables. In Afghan cuisine, it is typically enjoyed alongside steamed white rice or Kabuli Palow, providing a flavorful and vibrant rich contrast to the mildness of the rice.
